The name Pincho means Spike in Spanish. Latin America have a similar name for what the Spanish call brochettes, which is another thing altogether, but there is nothing like enjoying a brochette with your early morning coffee on one of those lazy mornings Spain is renowned for. Almost any ingredient can be used for either the tapas or pintxo, but the more popular are fish such as cod, anchovy and hake, the Spanish omelette tortilla de patatas or stuffed peppers and croquettes. Pintxo can get sophisticated, consisting of elaborate and expensive seafood or meat.
