Inside the mystery box are ingredients that the chefs must incorporate into their dish. Everybody gets the same ingredients. Fine. But the twist is the mystery boxes keep coming with more mystery ingredients that must be part of the dish. The guest judge is Wylie Dufresne, chef/owner of WD50 restaurant in New York and former "Top Chef Masters" contestant. It's a high stakes quickfire with $10,000 for the winner. Angelo needs the money because his fiance is in Russia and he needs to get her visa issues worked out. Can you buy a visa? In the first box is a fish, a can of hominy and fava beans. I'm stumped already. A few minutes pass and then the next box arrives with squid and black garlic. The next box serves up ramps and passion fruit. The final box contains jicama. Most of the chefs are freaking out and seem really set back on their heels by this challenge. Everyone is running around and out of breath. Angelo is sweating bullets, literally. Tiffany does a fish stew. Kelly does a stew also. Kevin and Amanda go with showcasing the rockfish. Ed serves up a sashimi of rockfish. Angelos does a pot au feu. "i've never seen Angelos this nervous," says Tiffany. "I think he's losing confidence in himself." Wylie's favorite dishes are Tiffany's stew and Kevin's fish. In the kitchen, Angelo seems really out of sorts and off his game. It's almost like he's undergone a personality change. Maybe his nervousness is a disguise? The chefs seem to work well with minimal meltdowns, including Kelly, who panics over her overcooked rice, but gets help from Tiffany. Angelo's dish is Beef Wellington, but everyone knows what it is. "Poor disguise," says Leon Panetta, who also calls Angelo's dish salty. Kelly's Kung Pao Shrimp goes over well. The diners don't know what it is right away, they just know they like it. Tiffany's Gyro gets big praise. "Probably the most elegant gyro I have ever ate in my life," says Eric Ripert, a guest diner and chef who I'm surprised to see. But turns out he's a guest judge filling in for Gail. Ed's Cobb Salad is well-liked, with Tom Colicchio confessing a love for Cobb salads, period. But he doesn't think Ed should have served a salad disguised as a salad. In the middle of dinner, Leon Panetta gets a note that has him leaving the table. "Business calls," he says. Hmmm, intrigue. Amanda's French onion soup is a hit and a miss, served with a marmalade that is too sweet for most of the diners.
