Indian restaurants serve national Indian dishes full of vegetables, spices and herbs. Since many Indian people don’t eat meat, their cuisine is perfect for vegetarians. It is well known for its savoury spices, especially curry which is now extremely popular worldwide. There are five geographical varieties of Indian food that can be found in Indian restaurants.

North Indian cuisine
If you are keen on food from dairy products, you can choose North Indian food when dining out in one of the Indian restaurants. Northern dishes are rich in such ingredients as milk, yoghurt, butter and paneer. Because of its historical heritage, North Indian cuisine is similar to Pakistani one: its characteristic dishes are kebabs, a snack called samosa and some mithai sweets. Achar pickles are also popular in this region.

South Indian cuisine
When you visit Indian restaurants, you can also ask for dishes deriving from Southern parts of India. These dishes usually contain a lot of rice, pickles and coconut. In fact, it is believed that southern food is the most varied from the food coming from other parts of India. Amongst dishes typical for that region there are Tomato Bath, Rice Bath and vegetable stews full of spices called Kozhambu. Other popular dishes are seafood, like mussels or prawns, and Ghee Rice with curry.

West Indian cuisine
Western food can be divided into three groups: Goan, Gujarati and Maharashtrian. Goan dishes are similar to southern food – they are made from coconut, rice and fish. Maharashtrian cuisine offers both mild and spicy dishes, e.g. rice, wheat, fruit, vegetables and lentils. Gujarati cuisine is rather vegetarian – what dominates here are sweet dishes with brown sugar as one of the ingredients.

East Indian cuisine
If you like various kinds of desserts, choose Indian restaurants which serve East Indian cuisine as it is known for delicious sweets. Some of its names are: chumchum, kheeri or rasabali. Other main courses of that part of India are rather spicy – they are made from green chillies, mustard or cumin seeds. Eastern cuisine is also famous for its curries – bhaja, bata, jhol and chochchoree.

North Eastern cuisine
The food of the North East is influenced heavily by the neighbourhood of Burma and the People's Republic of China, that is why it is rather different that the cuisine of all other regions. There are less spices used and the is given by endemic exotic herbs, fruits and vegetables. There are more fish and rice dishes than in the previously mentioned type of cuisine.

As you can see, Indian cuisine is full of exotic, unique and tasty dishes. What is also important, food deriving from India is healthy and diverse. Since more and more people prefer healthy food to fast food, Indian restaurants have a chance to become more and more popular.
